Imagine this (if you even have to imagine): all of your family and friends are posting adorable photos of themselves apple and pumpkin picking on every social media outlet imaginable. All you want to do when you see those photos is jump on that “basic” bandwagon and post pictures of your own! Well, when you live in the Midwest, you get some pretty gorgeous fall days- leaves are changing into various shades of reds, oranges, yellows, greens, and browns, the air is crisp but the sun is still warm, and really, the weekends are meant for fall festivities, right? Do yourself a favor, take advice from the girl who had her first apple picking experience at the age of 26, and JUMP ON THAT BANDWAGON! It truly is a whole lot of fun.
After paying for a bag to fill with apples, posing to get the perfect social media pics, and playing a game of Tetris with your apples in the bag (just to make sure you get the most bang for your buck), you find yourself at home with way too many apples. So, what do you do with them? Here’s a simple, GENIUS creation of mine:
Pulled Apple BBQ Chicken Sandwiches
Ingredients
3 frozen chicken breasts
2 medium-sized apples
¼ cup of apple cider (this can also be homemade)
⅓ cup of BBQ sauce (I used one I picked up from the Apple Farm called “Apple Hickory BBQ Sauce”)
Salt & Pepper
Directions
- Core each apple and dice it up into ½ inch cubes
- Add apples, apple cider & frozen chicken breasts into the slow cooker
- Cook on HIGH for 1 hour
- After an hour, season both sides of the semi-thawed chicken breasts with salt & pepper
- Brush on BBQ sauce over chicken and stir the apples around
- Cover and continue cooking 2 more hours on HIGH
- Shred the chicken in the crock pot and mix it all together
- Serve on a bun and top with more BBQ sauce
